Cambio Tequila Tasting w/ John de Rosiers

Educational Tasting with Cambio Tequila
February 25th | 7–9 PM

Join us for an intimate guided tasting with John de Rosiers, founder of Cambio Tequila and Poral Mexican Coffee Liqueur.

With a background as a classically trained chef and sommelier, John brings a refined perspective to tequila production. He’ll lead guests through a curated tasting while sharing insights into Cambio’s distillation process at ZB Distillery.

Space is limited. Reserve your seat today.

About Cambio Tequila

Cambio — meaning “change” — represents a reimagining of tequila production that blends deep respect for heritage with thoughtful innovation. 100% estate-sourced Blue Weber agave from the highlands of Jalisco is slow-cooked, tahona-crushed, and fermented using meticulous techniques to draw out rich, expressive flavors.

About John de Rosiers

John de Rosiers is a classically trained chef and sommelier with over 30 years of experience in fine dining and beverage programs. Beginning his culinary journey at age 15, John built his expertise in some of the Midwest’s most respected restaurants and developed an award-winning approach to food and spirits. His passion for flavor and craftsmanship ultimately led him to create Cambio Tequila — a brand driven by respect for tequila’s traditions and a desire to elevate what’s possible in premium agave spirits.

Poral Mexican Coffee Liqueur is a bold, handcrafted coffee liqueur born from a harmony of Mexico’s finest ingredients: crisp Cambio Blanco agave from Jalisco, rich specialty coffee roasted from beans in Chiapas, and a subtle sweetness from Veracruz cane sugar. The result is a smooth, expressive spirit where deep dark-roasted coffee meets bright agave character for a complex, balanced sip — perfect neat, on the rocks, or in elevated cocktails

Tasting Event with Quiote Mezcaleria

Join us for an educational tasting event with Quiote Mezcaleria on February 20th, 6 PM - 8PM at Switchboard in Downtown Austin.

Aidan from Quiote will provide a guided tasting of a few mezcales hand-picked and available one night only to sample in Texas. Space is very limited.

"At Quiote Mezcaleria we promote maestros mezcalerxs and their traditional production process. We travel all over Oaxaca to source small-production mezcal and showcase the hard work of maestros and maestras whose recipes and knowledge have been passed down for generations and shared through family and their community. We do not alter the mezcal from its original form. The mezcal we offer is unique with a story to tell, and speaks to the place of its origin. Our passion is to preserve mezcal in its original form and transcend it into mezcal of the future."
